At what season (s) in Buffy did she film "I Know" and "Scream 2"?

I think between one and two, because she had her hair cut in I Know and came back in S2 with shorter hair...

Google, my friend...yup, they were both in 1997. 🙂
 
I'm 95% certain (though I should consult my many SMG biographies) that both were filmed from January 1997 till August. Buffy Season 1 was filmed in early 1996 because Sarah was 18 and turned 19 in April 1996. She said she met Freddie when she was 20 on the set of "I Know" (Reese Witherspoon turned the part down because she didn't like horror) and Joss liked Sarah's hair, makeup and fashion style in Scream 2 so much he kept the look for Season 2 of Buffy.
