I always liked the Angel and Lindsey fight in You're Welcome.
It wasn't the best, but there was something about it that was very unique.
Not to mention Lindsey would have kicked his butt if not for Fred and Wesley and their pesky magics.

Buffy: 'Graduation Day Part 1': Buffy vs. Faith. Slayer vs. Slayer.
Runner-up would be Buffy vs. Glory in 'The Gift'. I'd been waiting so many episodes for Glory to get her ass kicked.
Angel: Angel and Co. vs The Beast. 'Apocalypse Nowish' The Beast pretty much schools all of them but they still all get their moments.
Runner-Up: Faith vs. Angelus in 'Release'. A really great, brutal fight between vampire and slayer.
