Why does it say "Alyson Hannigan as Willow" when everyone else's is just their name?

It's just a sign of respect. She replaced Anthony Stewart Head as the "and" credit.

As Connor said. It's a sign of respect. They used to do it frequently in older movies for actors/actresses that may not be the lead role, but draw a good audience, and are exceptionally talented. If you're not the first person in the credits, generally being the last is the second best.

You'll also notice that in the Angel credits, it was always the last one to join the cast used to be the last credit without an "and" or something similar, until Season Four, when Alexis Denisof got the "and" credit.

I hadn't noticed that about Angel. Guess I haven't seen it as much as I have Buffy.
