Oh, it's not so much the fact that Buffy kills the knights that I have a problem with. There was no other option at that time. It's the fact that she doesn't seem to care. It's never mentioned again.

Although, I suppose it could have contributed to her going catatonic. It would have been nice to have seen some kind of recognition though. It wasn't all that long ago that she was beating on Faith.

Why should Buffy even care, considering that Caleb not only had the ability to kill her, but had the power and the will to do so?

Ok, not only was I clearly not talking about Caleb, but as I stated (repeatedly) in other posts in this topic, Buffy holds a human life at a higher standard than most other people do - and that's saying something. She always had, up until she came back from heaven. That's why she should care. In season 5. About the knights.

I dont know why it does bother you, they were trying to kill her, seems pretty natural that she would fight back.

At the same time, Warren tried to kill her, (granted a year later), and she preached to Willow that killing him was wrong, etc.

Of course, Willow was out for revenge, but I think the base argument still lies there. Killing humans is wrong. It bothered me, not to the point of having an inner morality debate, but it made me wonder where they drew the line and why the point was never raised. If I were in her shoes then I would've defended myself and my loved ones by any means necessary, but then again, she could've rendered them unconcious by knocking them out.

I go back and forth on the subject. Like I said, doesn't really bother me, but I think the subject could've been brought up and addressed.

I would have thought that the fact that Caleb was infused with the strength and power of The First would have sort of negated his humanity - he had superhuman strength that completely nullified Buffy's power until she had the scythe. It was a case of kill or be killed.
