I like how certain characters have recurring likes and quirks. Like for example Cordy is going skiing in Amends in Aspen, than in Provider mentions she wants a ski condo in Aspen, and imagines the mountains in Birthday with Skip.

I also like Buffy affinity for ice skating (mentioned in Helpless and What's My Line) as well as Angel's like of "Mandy."

Can you think of any others?

I love how every time someone says anything to Giles he's too busy thinking to hear them right away and he's like, "...What? Oh." It happens so often. I think it's adorable. xD

Giles' habit of polishing his glasses, whic is almost certainly just his way of stalling while he's trying to figure out what to do or say.
 
Buffy's total lack of driving skills has always been my favourite. Also always amusing is spike's obsession with Passions.
 
Anya's insecurities about her new haircut in season 7. She says in more than one episode something to the effect of "It's the hair, isn't it? Not attractive?"
 
Jenny's eyes zing around all over the place. Especially in Passion, when Giles leaves her classroom. Just watch!
 
Buffy is constantly using colloquial phrases and expressions, then frowning and admitting that she doesn't know what they mean.
Examples off the top of my head:

"I'm right as rain. Whatever that means."

"You'll be making money hand over fist. Which...I guess is a good thing."

Spike's love of The Sex Pistols.

Angel and his use of old-fashioned expressions.

Xander's love of die-cast cars.

how could I forget about Spike and the sex pistols?!
Spike's poetry is an obvious one that's been missed.

And I guess you could say Willow and computers... in season 1, she's computer gal and in season 6 when Buffy comes back Dawn says referring to the computer, "that's Willow's - obviously." So that spans seasons...

And possibly my favorite Buffy quirk... the adding "y" to things. She even comments on it when Wood does it in season 7 that he's starting to speak like her. I love it when she does that.
 
Xander's clown fear, Buffy's puppet fear, and Giles' computer fear (to add to Willow's frog fear and Anya's bunny fear).
