They talk as if the vast majority of reboots aren't just stale corporate formulas with a paint job of a show or movie that was actually good back in its day, but actually has nothing to do with what that show was beyond mostly irrelevant details (name of characters, town, school, etc) or even the opposite of the characters or theme of the original.
That is, they're not reboots, they're more bait and switches that would almost certainly flop on their own but leech off the popularity of something that was good. And some (like Heathers) I'm convinced they're just lazily trying to get people to hate-watch it rather than make anything good (as either as a tribute or even just a bait and switch).
There do appear to be exceptions. From what I've heard, I think their reboot of the Karate Kid (which I'm not sure counts, it could be more of a spinoff since it follows the characters as adults rather than kids) is well done, and I understand why Riverdale is popular (even if it's still more of a bait and switch--but in this case, well done and darkly hilarious, just not anything I'd associate with Archie, whereas the 90s Sabrina actually did seem inspired by the character).
