I would imagine that most of the charm of the original comes from the stop motion animation calling back to the classic Rankin Bass Christmas specials, and live action would negate that. It would just end up being a green screened horror show.
The live action kind of make sense when production limitations or dated material does make an otherwise serviceable plot unwatchable for small children (Dumbo). Or when an adaptation would be better served by live action, say, a Sword in the Stone adaptation that leans heavily into Once and Future King, or a Jungle Book adaptation that seeks to adapt more of Kipling's work, or a Black Cauldron film that learns the lessons of 40 years of second world fantasy. Or something like a remake of Winnie the Pooh with CGI dolls, or something. Or a classic that gets remade in a way that doesn't feel like a Disney film, like cut the same character models, or the Mellowmen, or the musical number, but still make a quality film. But, that's not what these are. I'm not entirely certain what's going on with Snow White, nor do I believe anyone else does. Although, I will forgive it all if Rumpelstiltskin from "Once" makes an cameo appearance.
