I kicked ass at dinner tonight and wanted to share it. I’m not a cook at all. Bought a week of those meal kit things and now I feel like Gordon Ramsey! (Apparently reading directions isn’t that hard?)

Anywho, I decided to share my culinary skills with you, and maybe you can share your culinary skills (or lack thereof! No judging here!) with me!

Yum! Looks good. We tried one of those boxes one week. It is definitely nice having everything for a meal and not having to worry about what to cook. Only thing is with a family of four it is a little expensive to get a box each week to feed us all. Love the convenience of it though.
 
I made a Chicken Chili tonight and it was so good! I have impressed myself!!

Does anyone else like to cook or want to share their cooking?

Earlier, I had the GREATEST time chasing my niece and nephew around with a large can of Silly String and water balloons. 😈 It was SOOO fun!!! 😆

I really enjoy cooking so I do it most nights. The Purple Carrot meal boxes are my favorite. I'm not cooking tonight but I'll post tomorrow night with whatever I decide make.

I'm not good about remembering to take pics before eating it all. ha. Anyways I made this ginger salmon salad the other night:

Lettuce of your choice (I used butter lettuce and spring mix)
Mango chunks
Avocado slices
Radish slices
Edamame
Micro greens
Salmon (I added a little salt, pepper, garlic, and ginger seasoning then cooked in the skillet)
Sesame ginger dressing: Olive oil, sesame oil, white wine vinegar, minced garlic, minced shallot, fresh ginger, salt, and pepper.
Throw it all together and it looks fancier than it is. This has been a go to of mine the last month or two.

This is what I have planned for tonight: crispy black bean tacos from a meal delivery kit. Should be super easy to throw together.

Don't wanna see pics of it after it's eaten. Unless it's one of those selfies you take where it's accidentally floating in the bowl and you don't notice it hanging out there until after you post the selfie online and everybody starts making FAIL memes out of it.

This thread makes me hungry! Also maybe hungry too cos I havent eaten since yesterday which was fried rice with asian greens and crispy chicken. Obsessed lately but outta rice now.

I made a big veg curry last week with cauliflower rice. I know i still have a tub in the freezer. Guess thats dinner done! But i feel lazy doing that since I do have semi fresh food in the fridge and will have to make the bunnies dinner anyway.

My chat mate used to give me great ideas when i told her what i had on hand. Shes got diabetes now so i dont wana ask her anymore cos theres so much she cant have!

Tonights fridge options are kale, potatoes, eggs, half a zucchini, onion and carrots. Im thinking zucchini and carrot noodles with fried onion, kale, omlette, mix of soy/fish/chilli sauce and maybe some chicken breast if i find any in the freezer. I have been loving making little fried chicken bites but my tummy grew back on that.

Your chat mate may have some diabetic recipes and it sounds like what you have in the fridge would be perfectly acceptable for a diabetic. My father-in-law was diabetic and he still managed to eat reasonably well. The sauces are the only questionable items but you don't have to tell your chat mate you have them. Avoiding excesses of sugar and fat is mandatory for a diabetic but also works well for the rest of us.

Shes carb counting and I can't do the math. I know she cant have potatoes but we both love the zoodles. 😀 My daily milk intake would probably kill her unborn child.

What food do you like @Cohen ? There is a pinned BB cookbook in The Bronze.

Nowdays I see what I have on hand, or in the garden, rather than buying ingredients specific to anything, my chat friend certainly helped with this as my choices were extraordinarily limited. I think I have some yum meals figured out now though, still not too sure on the nutritional aspect but I go to bed with a full belly, which is nice 🙂.

Having a full pantry is great. It seems expensive to stock it, but sauces like Fish sauce, soy, oyster, sesame, hoisin, chilli etc last forever and go well in any throw together asian inspired meal. My fridge can keep some things cold enough - like minced garlic, butter, mayo, wasabi and my freezer can do the bread and frozen mixed veg thing, and meat too when I get it. I always have carrots (to dip in hummus - basically smooshed chickpeas with lemon juice, pepper and herbs/spices) and apples to nom with cheese. I have fruit trees in the garden, plus strawberries and cherry tomatoes. I like to stock up on bread crumbs and oats because you can coat all the things if there is a KFC/takeaway craving (chop up thing you want to fry, coat with egg, coat with oats/breadcrumbs/flour and fry in oil or oven bake). Potatoes (Tatoes to @Spanky) are a staple, jab them, microwave til soft, then moosh and add butter/cheese/salt/egg/tuna/mayo/pizza toppings... I always have beans too - if you have herbs and spices you can make these taste like anything (kidney beans taste like mince meat in tacos and pasta, chickpeas can almost be chicken if mixed with chicken stock powder). Oil and stock cubes are a must for any cooking (I am hell povo and love canola oil). I dont eat as much pasta as I do rice. I love zucchini noodles, especially if braised in chicken stock. A sure fire way to get anyone to ask "WHATCHA COOKING?" is to fry onion and garlic in a pan. Makes the kitchen smell like a restaurant.

I think shows like masterchef can complicate cooking for some people. Like to make garlic bread you can just butter some toast and add garlic salt and its almost the same, if you want to go fancy you can bake the rolls and mix minced garlic with butter and herbs, but its not worth it for one. Curries are usually made from a jar base even from restaurants so its as easy as heating the jar contents, adding the ingredients and adding coconut milk + your own extras. It doesn't have to be fancy to be tasty.

I hate following recipes and if I do look at them I never measure and rarely remember the method right. Food still comes out edible. I made a kale and chickpea meal for some extremely fussy guests once cos all I had was garden grown kale, beans and rice and they cleaned the plate, unlike when they cooked sausages and potatoes dripping in fat the following night. I can go out in my garden any day now and find enough to feed myself, 2 rabbits and 4 chooks. (Plus all the wild birds, 3 bobtail lizards and one naughty wild rabbit who is residing under my jasmine vine). It wont be the same when summer hits 🙁

Its super handy to have a herb garden. I need to organise mine a little better for maximum growth. We have little pots of herbs in our supermarkets here which are quite cheaps and ready to use. They grow back too (if you don't let rabbits nibble them) 😀 Cooking is much more fun in a functional kitchen, so start with that 😛

My husband and I eat anything! Not picky!
Very late dinner tonight, I was procrastinating cos there wasn't much in the fridge. I ended up making vegetarian pizza pockets, a fancy name for bits wrapped in puff pastry.

I got some kale, basil and rocket from the garden, stirred some garlic and pizza herbs through tomato sauce, added cheese and onion and slice roasted sweet potato (from my neighbours garden, it cooked as I was foraging) on to the puff pastry. I realised it was probably going to break if I left it flat so I wrapped the pastry over the fillings, sprayed a little oil on and put in the oven for 15 mins. Tastes delish, was super quick with fresh bits and there is another one left for later.
