{Okay, it's probably a weird subject for a thread, but all of the talk about Easter eggs just got me to thinking about what gets done with all those boiled eggs)

An unofficial part of Easter, at least in my family, is to make egg salad with the surviving eggs. Our recipe is quite simple. Chopped up eggs, sweet pickle relish, and mayonnaise, but I've encountered several variations over my long and adventurous life. So, egg salad gourmets, this is your chance to share your own favorite variation. What is it?
 
Mine is a bowl of egg's, with butter mixed in, salt, pepper, yummy.
Think i might try it with some Branston pickle now though.
 
All these ideas sound good. I can only just about boil an egg so can't really offer any of my own.

Why.......just why did I stumble across this thread? Now I'm hungry....

As far as making it, I only go so far as boiling the egg.....and then looking at the egg. Someone want to make one for me? 😀
