For example, S6 would be the obvious OMWF and Grave, and for some people it could be Dead Things or Tabula Rasa.
S2 would be the obvious Becoming and Innocence (not for me lol), or for some people B,B,&B or Go Fish.
Or for S4... Ok, I think you get it. lol

So, for S7 I'm guessing the obvious epy's are:
Conversations with Dead People
Chosen

Is there any other episodes that stick out in your head when you think of S7.

For me, I think of Potential, Storyteller, Him, and Showtime (was that the one when Buffy killed the uber-vamp in front of the potentials?)

S1 - Angel, Prophecy Girl
S2 - Schol Hard, Lie To Me, Innocence, Passion
S3 - Band Candy, The Wish, The Prom
S3 - Hush, Restless,
S5 - Fool For Love, The Gift, The Body
S6 - OMWF, Tabula Rasa, Normal Again
S7 - Chosen, CWDP, Lies My Parents told Me, Dirty Girls...

I guess this is mostly a favorites list...not sure if that's what you were asking 🙂

Gotta go with the weird/surrealistic ones... Nightmares, Normal Again, The Wish/Dopplegangland, Hush, Restless.

EDIT: gaaah... didn't see it was about S7. Well, never mind. ^^

Grave doesn't stick out at me at all for season 6...

Anyways, season 7...Conversations With Dead People, Him, Storyteller, Dirty Girls

There were a couple of really good episodes in season 7. Chosen, Lies my parents told me, and Conversations with dead people were all very well written.

season 1 - Angel, Nightmares, Prophecy Girl

Season 2 - Innocence, Suprise, Passion, Botheres, bewitched and bewilidered.

Season 3 - The wish, amends, Graduation Day, earshot, Gingerbread

Season 4 - Fear itself, Restless

Season 5 - Real me, The Gift, The Replacement, Family

Season 6 - Seeing Red, two to go, Grave, Tabula Rasa, Once more with feeling

Season 7 - Him, Conversations with dead people, Selfless, end of days, chosen, dirty girls

Season Seven episodes that 'stick out' to me - Beneath You, Selfless (I love Anya's song), Lies My Parents Told Me (anything with a flashback is memorable), Get It Done (Just because its different) and Chosen (the finale is always memorable)
