If you could change one thing and one thing only in any episode of BtVS or AtS, what would it be and why? What do you think the effects of this would be?

I would stop Doyle from dying.. I would love to see how Angel Investigations would have grown with Doyle in the group for longer and maybe TPTB would have chosen someone other than Cordy and her storyline may have changed into actually having a relationship with Angel. Doyle may have gone bad if he was the ex, and maybe another female character (new or in the series) would have been chosen for her storyline. I think not killing Doyle would have had a massive effect on the storylines. Ooo maybe Doyle could have had a relationship with Fred instead!!! OOo the possibilities are endless with just one change...

What would you change? ....

I heard rumors that they were going to bring Doyle back but then the actor who played him died in real life.
I would not have had Cordy go into a terminal coma. She would have remained an important part of the Fang Gang and would have been pivotal in defeating Jasmine, thus making the whole pregnancy/Jasmine stoyline worthwhile and being an interesting character arc.

Spike in What's My Line, if he had died instead of being in a wheelchair then no Spuffy no teaming up with Buffy, no chip and teaming up with Adam, meaning a completely different series post high school

ooo interesting as this would have effected AtS as well!
In the Angel finale, "Not Fade Away", I would have had Buffy have a presence. She didn't have to be in it (I get that the final episode is about Angel's crew), but on their "last day", I would have Angel either call her and get an answering machine or at least have him just sitting at a table alone, looking at his claddagh ring and remembering.

Not Fade Away is one of my favorite episodes ever, and I don't think Angel ever really forgot about Buffy or anything, but it would have been really nice to see one final moment there.

I didn't realize this was missing until I read your post. Now it's absence makes me :(
I would have never let Jenny Calendar die... passion is one of my favourite episodes, but it breaks my heart everytime I see Willow break down upon hearing the news, and also the moment where giles discovers her body... really heart wrenching stuff.

Actually upon reflection, it is these moments that make me love the episode, but it does upset me. Instead I'd never have Cordy go evil... it ruined her character for me, I liked the storyline, but I just hated losing Cordy... I know she didn't technically leave til late season 4/Your Welcome but with her being evil, she disappears at the end of season 3 and has a too brief reprise in the hundreth episode, which made me miss her loads.

I would have sent both Spike and Angel to Acathla's dimension in Becoming, never to come back.
 
I would never have made the decision to make Angel a vampire. Instead, he would have been a human cursed by Gypsies to never age or die until he met the one girl in all the world who really belongs with Spike anyhow.
 
I would've let Jenny live. It would've been awesome to have another mature adult around in the series, and there was so much of her character left to be explored.

I would have had Angel meet up with Cordy at the end of S.3 and confess their feelings to one another. I was so gutted that that never happened and she became a "higher being". I was upset/annoyed/disappointed etc. at that part. Really wished they had got together, even just for a little while.
EDIT: To be honest, getting rid of her was a bad idea (I understand why they had to though) but she had grown so much throughout Angel and was a vital part of AI

These are all such good ones! But I think I would chose to not have Willow's magic become an "addiction." I liked when it was a metaphor for "lesbian sex" or whatever. But it was really dumb for them to just change it to an addiction...IMHO! Oh and not have Tara die... But I really think if the magic would have never become and addiction she wouldn't have anyways. Every little thing in life changes the course of events for everything I think... 🙂

But then, although there will be no Spuffy, there will be no anything. Buffy will become sad and lonely and won't know what to do in season 7 and it will all go horribly wrong and we all know she has a habit of leaving when it all goes wrong and Sunnydale would be overcome by the First and its minions and Xander and Willow and everyone would die and aaaarrgggggghhhhhhhh THE HORROR 😱

One thing? I would change the storyline so that Cordy came back from her higher level corrupted somehow without having to become pregnant with veritable demon spawn and lapse into a coma at the end of the season.

I don't mind the idea of Cordy turning evil for a little while - if it had been executed well - but it wasn't.

For Buffy I'd change the big bad for season 7

For Angel I'd remove the Angel/Cordelia romantic relationship plot
