If you owned a restaurant, what kind of food would it serve? Would you run a haute cuisine French restaurant in the business district, or a french fry wagon at the local baseball park? What would you call your place? How big would it be? No need to pick something you know how to cook...what would you want to open if you had enough money to hire the chef you wanted? Would you open a bar that served beer and munchies, or a place that catered to the Scotch and cigars crowd?
I'd like a small restaurant, about 35 to 40 seats maximum. That would allow the chef to actually come out and interact with his patrons. I'd love to serve food just a cut above your average roadhouse fare...like swordfish, and steaks sauteed in whiskey butter. Regular food, just "kicked up a notch" to be interesting. I might call it "Sam and Ella's" just to be funny, but more likely something else, with a "Cafe" or "Bistro" in it.
