Bacon and Cabbage is pretty traditional...it won't really keep for something hot or cold.
The barnbrack or Guinness cake is really nice but takes an awful long time to make.
I think Irish brown bread is yoru best bet...very easy to make, about 40 mins in the oven and then just leave it cool. Add some Kerrygold and a cup of tea and your sorted😉 I can give you a recipe if you want or if there is a Stop and Shop or Whole Foods near you I can tell you what m,ix to get...you'd just have to add some water and flour.
Alternatively there is Apple tart and fresh cream if you want something really handy to make and will of course travel well.
