It seemed like a good idea, but then… - changing characters (for a good reason)

So, I was watching the end of Charmed season 1, and Piper says something like ”it is fine being the manager of a restaurant, but I’ve always dreamed of being a chef” and that she is gonna quit to pursue having her own restaurant.

It makes sense, as the character from episode 1 has been very focused on being a chef, cooking, etc…

By the first episode of season 2 Piper is buying not a restaurant, but a nightclub.

Now this makes sense, and storywise it is a good call, because more demon stuff and fun stuff can happen at a club, rather than at a restaurant. So one has to overlook Piper’s defining traits and final words of season 1, but for a good reason.

Can you guys think of other characters with traits and goals in season 1 of a show, that are then redirected and slightly changed, but in a good way, or just necessary way? Basically, it was a good idea in theory, but in practice some changes had to be made for the story to flourish.

My mind has currently gone blank for specific examples, but this kind of thing is common, as everyone is still feeling their way around the characters. It is when characterisations start changing from episode to episode during a series for no reason other than for that specific episode that you get problems.
