Made a Smithfield marinated bacon topped pork roast for dinner with potatoes & corn
Will be enough for 4 more meals! Was yummy!
 
I fried up some garlic prawns to have with my bag of salad. Feeling fancy.
Yesterday I did actually cook potato, onion, bacon and cheese stuffing for capsicums but I gave half to my neighbour (who grew the capsicums and onion) so now there is none left cos I ate the rest with fried tomatoes last night (which my neighbour also grew haha) I hope I can at least pop out a zucchini from the garden this year!
Gotta use some meat from the freezer. Its very full. Salmon or sausages should be the first to go.
 
Breakfast - cuppa tea and nutella on a spoon
Lunch - vegetable and cheese bake with chicken breast
Dinner - iceburg salad with tomatoes and bacon

If I can be bothered, I might make some icecream tonight. We'll see. It might make the nutella go further if I actually use it in things instead of eating it straight from the jar.
 
Hmm First lot of jam tarts - fail. I thought it was a waste to not use the whole grape, and I didnt use enough geletin and its just a lumpy mess. The bases were not cooked properly and soaked the jam up overnight so its all soggy today. The flavours are there but they look a mess. I just dumped 3 in the air fryer to melt cheese on top, and then burnt them. Still edible, good tastes, but total mess. Not sharable.

I have another batch of jam setting now and I will try again. And if that fails, I have 2 more bags of grapes in the fridge.
 
I'm thinking about making some rice pudding, I'm sure I've still got some pudding rice in the cupboard and I can add the rhubarb syrup that I accidentally made instead of jam!
 
Saw a YouTuber make Greek yoghurt bagels and it's the first time I've actually been tempted to try a recipe I saw on a video. Might have to keep it in the back of my head for when I've got my own place again.

On another note, I'm home alone for the first time in a while and instead of cooking something I haven't had in a while... I ordered pizza enough to last until they come back from vacation 😀
 
I did lemon potatoes, and it was supposed to do 2 meals but I ate the lot, so will have to rethink dinner tomorrow now.
 
I was craving chinese so ordered a lemon chicken meal kit. Said single serve and not to reheat once cooked. So more than half went in the bin. Far too sweet. Chicken was rubbery. The only good bit was the pak choy which wasnt in the kit, I just added it instead of rice. Wont buy again, lucky it was half price.

I have some more salad kits but they are substitutes of what I actually ordered so I duno if I will like them either. They'll keep me going til monday.
 
The asian salad kit was great! I will get that again. Its not something I could make myself from scratch anyway, well thats what I tell myself to justify the price.
The problem is, it says 3 serves on the bag and I eat it in one - none of these bag things keep once opened. I can just hear Dr Nowzaradan saying "Dis is a very big stomach" as I devour the entire bag.
 
Food delivery tomorrow morning, so I'll have a go at doing a meal plan afterwards. Need to start cooking more again.
 
I am soooo happy to have these salad bags! They are so yummy! I never used to like dressing on salad but I like these so far.
Tonight I cooked some plain beef mince and mixed it with the asian salad bag. SO EASY. So yummy! I am stoked! I couldnt eat the whole bag this time so I hope it keeps for tomorrow. I am stoked for have found something so easy and so delish and if I dont eat the whole lot in one sitting, its under $10 a meal 😀 YAYYYYY!
 
Mom and stepdad are celebrating their anniversary today, so I gotta get food for myself; low and behold, they had special offer at the grocery store on a pork roast sandwhich, which I fell in love with last year. Yum 😀
 
I'm going to do simple chocolate fudge today, maybe with peanut butter in it. Need to check how much peanut butter is in the jar first. Its a chuck it in the slow cooker and just remember to stir occasionally one.
 
I'm thinking mashed potatoes tonight, with my last frozen pie.
Then leftover mash tomorrow night, maybe with fish fingers.
Not sure on Saturday yet, but if I'm off on Sunday, I might do a sausage casserole or something like that.
 
Last nite I made my own chicken garlic parmesan pizza. I used Stonefire brand artisan crust
I spooned some Prego garlic paremsan on top. Added some cut up chicken & sprinkled some real bacon bits on top
Then added some Kraft fat free mozzarella, low fat cheddar & grated paremsan. Baked for 6 minutes. Was yummy!
 
I've made soup, so that's lunches this week. I made 4 portions, so now I have to find 4 tubs with matching lids to put it in!
 
Sausage and mash with mushy peas . Delightful meal , even though they were the last of the annoying Christmas sausages . Got them on a deal and I will never buy them again . They take forever to cook !

Should have done an onion gravy but I wasn't feeling anything nuanced . Metda put the meal in my head last night .
 
I cooked a lamb roast yesterday but it came out tight and not as nice as usual. So I might use some in a curry today, if I am hungry enough to bulk it up. I did put a portion with potatoes and onion in the freezer but its a real winter meal and unappealing in the heat.
 
I'm going to take the chicken thighs out of the freezer and I'm debating on either bbq chicken or cooking them up and using the meat for pasta.
 
I found a, I don't know how old, packet of jelly hidden in the cupboard. So I'm going to have jelly for the rest of the week now!
