Meal Planning #2

Just made an easy spag bol. Usually I bulk it up with veggies, but Im too tired and dont have any so just did simple meat tomato and onion with pasta. 3 serves, one for now one for later and one in the freezer.
 
I was going to have sausage, bacon, eggs and mushrooms tonight, but I watched something last night that put me off the sausages! Fortunately, all the meat is in the freezer, so I think I will have a cheese and mushroom omelette instead.
 
Got salad bags in this evenings grocery order so that should take me though to saturday. On special two for $10
 
I need to make more weetbix slice before the weetbix goes stale. But now I dont have any flour so I have to wait til next week for that.
 
Cut up that last part of leftover sausage from that Irish bangers & mash. Made some angel hair pasta.
Then microwaved slice of american cheese, spoonful of sour cream with bit of milk
Mixed that up with the bits of sausage & then stirred it into pan of cooked pasta
Put on plate & sprinkled some grated parmesan cheese on top. Was yummy! 🙂
 
Got a tray of chicken parma in the oven now. Havent started the pasta yet. I know I will regret the pasta part, but I cant just eat chicken, cheese and sauce can I! Can I?

I'm pretty proud of myself and my grocery haul and meal planning this week. I've had to really watch my finances lately, so I had a goal of spending only $40USD this week on groceries, and I made my goal! And I didn't even have to drive to Walmart - I got all I needed at the "Dollar Store"!
Breakfasts will be coffee, orange juice, and oatmeal with apples and cinnamon,
lunch is rice, beans, onions, garlic, homemade pico degallo, maybe some lime and avocado if I can find some cheap (or pilfer some from work, lol)
and dinner is spaghetti with meatballs and brocolii. Of course this doesn't include spices, oil and the like.
I'm not much of a snacker, but I have popcorn if I need it. I like it with salt and parm cheese.

I detest that there is a 4 percent tax on groceries here where I live in Oklahoma, USA - where I used to live, in Washington, there wasn't. It adds up for sure.

I need to check what's on my food delivery for next week.

Go through the freezer and figure out what I've got left until that arrives.

I'll have my last sausages for breakfast this morning, as no bread but I've got bread rolls left.
 
I know this week will feature quiche with baby potatoes, plus some of the chutney collection!
 
I crumbed some chicken and its in the oven now. I was craving chicken burgers last week, now I shall get them! Minus the burger bun bit... the crumb will do.
 
I made myself a wonderful Beef Stroganoff,
unfortunately I forgot about it,
so the planned meal became an unplanned mold, but it did look good
although it did not look good enough to eat.
 
I have pancakes in the fridge for later! And not the Scotch ones I accidentally ate last month.

Because I cannot cook pancakes that look like pancakes. More like lumpy heaps of batter.

Going by my experience with omelettes, I am probably too impatient when cooking them and trying to flip them too soon.
 
Last of the quiche tonight, I'm working a long day tomorrow so it'll be a quick from freezer to airfryer meal.

I might do a roast dinner on Sunday.
 
I wont get pork schnitzel again. It was on special and absolutely lovely to have such an easy heat and eat option, but I didnt much enjoy it. I'd rather make my own chicken schnitzel instead, taste wise. I'm getting too used to easy options too, I don't want to let myself slack off and rely on them too much.

In saying that, I'm having chips and cottage cheese for dinner tonight. Cant wait! My migraines cant get enough of dairy and salty carbs lol.

Tomorrows order has one of those premade coleslaws in it, so all I need to do is figure out which meat to defrost to have with it.
 
@NotASlayer made me buy ham, so I've got gammon in the slow cooker now, ready for toasted sandwiches tomorrow.

It's only a small piece, so it'll do me for lunches for the week, mostly sandwiches but maybe an omelette too.

Thinking a ham and mushroom pasta bake thing, not sure but got mushrooms to use up as well as the ham.
