Meal Planning #3

I need to eat more fruit and veg, so I might start making smoothies again. Need to see if I still have the smoothie maker, otherwise it'll be the harder to clean blender.

I made a snack tub for work tomorrow, popcorn, pumpkin seeds and cashew nuts, just simple and what was already in the cupboard.
 
I dont remember ordering these pork belly slices but they were in the freezer and are quite delicious, but I feel like they might give me a heart attack haha. I havent had pork belly for years. And while its yummy, it scares me to eat it now days!

Oh that reminds me, there's chicken in the freezer, that I should get out. I have a butter chicken marinade in the cupboard so I could do that tomorrow.
 
I did not get the chicken out, but I have boiled some eggs, and made some mashed potatoes.

Decided that I want mash fish and veggies for dinner tonight, so I've done the mash now ready, also because I saw the potatoes had sprouted!
 
I did remember to get the chicken kebabs out, so its them and broccoli tonight.
 
I made this yesterday, and it tuned out really good! It made at least six servings, and would freeze and reheat well. I added an egg on top too.

It has been so hot here that salad is just so easy!
I need to use up food before I go away, but also empty the freezer so when I get back I can order a new one.

So today and tomorrow it's mashed potatoes with something from the freezer, tonight fish and veg, tomorrow probably pie and veg.

Kinda wishing that it was a bit cooler weather wise as I've got loads of soup in the freezer.

Lunch today is eggs
 
Am attempting overnight oats so I've got a breakfast prepared (and can throw on some quick toppings like fruit in the morning). I'm in the experimental stage with the ratios/toppings. Once I find a couple of combinations I like I can prep a few days ahead.

I skip the oats and just make a tub of fruit salad every week. It does me for every breakfast and as a dessert for maybe half the other meals.

I rotated between just having fruit, or fruit with yoghurt. Think boredom was also part of why I looked into something else. Oats are filling, added fibre, nice positives.

Two granny smith apples, two oranges, two kiwis, red seedless grapes, a small tub of blueberries and a cantaloupe melon.

Some things are specifically chosen for colour variation. Using a galia melon and green grapes instead makes the whole tub very pale green, when you have the apples and kiwis as well.

Now that is a great fruit salad! 😀

Do you like the traditional green kiwi, or the gold ones? I enjoy both, but now gravitate towards the gold one more.

I get the green ones because the gold ones can be as easy to obtain as, well, gold! And the price of so many fruit has gone up enough that I'm not looking to increase the cost of the salad even more! Otherwise I'd get stuff like honey mangoes in season.

I hear you! It's almost painful to look at the price of fresh fruit (well, most food nowadays).

I will say this, all this talk of fruit has me hungry. 😁
