Meal Planning

I decided I was going to bake cupcakes. Which meant I had baking trays and thought I would just buy some cupcake mix. This needs a little more planning going into it before I do it! I may do a fair amount of cooking, but not much of that is baking. You need a few more things than a tray and a mix!
 
The roast chicken is revolting. The dogs are getting the rest.

Remind me in the morning to get some beef mince out of the freezer and I will make a burger with my last bun for tomorrows meal.
Sunday I will have Salmon with salad.
Monday I'll have ham and eggs.
Another order comes Tuesday and I will edit it Monday night for what I feel like 😀 love that for me 😀
 
Next bulk cook will be spaghetti bolognese. I just feel like that today! I will do some with pasta already in and some that are just the sauce to freeze. I am not sure when I will do it, but its my next plan. I dont have any onions and maybe I will use roo mince to cut the fat back a bit, depends what I have in the freezer. Next grocery order is Saturday so this is to remind me of the plan!
 
Sausages for me took a 6 pack put of the freezer to do meals with this week.

I'm also going to do banana bread for work lunches this week, although I do still have brownies in the freezer.
 
Just finished off the banana bread my daughter made last week and it was excellent. She made brownies over the weekend but they have disappeared like San Francisco fog - there in the morning and gone by noon.
 
My freezer is so full, a container fell out and smashed on the ground. So Im having whatever was in that for dinner tonight.

I keep trying to cut carbs but its so fraking expensive! I love salad and meat, but I just can't justify the cost of it.
 
Food delivery just arrived, so meal planning time. Chicken curry this the first plan, might bake too.
 
I did neither the chicken curry or baking. I must remember to get the salmon out of the freezer though.
 
I made creamy chicken and mushrooms tonight, but made it too salty (no wine) so I had to add pasta. Now i have 4 feeds worth lol.

If you can freeze it, I would call that a successful batch cook!
It's the last week before the food delivery, so time to go through the freezer and see what I've got.

I've got plenty of potatoes, but it's really too warm to do mash, so I'll have a think and do a warm weather meal plan.

Potato salad?
Lamb was on special this week and i think everyone in town got it, cos even walkies smelt like lamb cooking this morning haha. So I roasted that yesterday, already portioned and frozen. Some left for dinner tonight as well.

I still have leftover pumpkin for soup and sweet potato for mash. Bok choy and beans to put in a chicken and chick pea curry, probably tomorrow. I got a fancy spice mix on special too, which is a treat! Much easier when I dont have to think or balance anything, just all goes in the pot.

@Kendar turns out I do like brussel sprouts again 😉 put them in the pan with lamb fat, they were delicious! I will be doing that again. I think I ate more brussel sprouts than anything else I made yesterday! Thanks for the tip 😁

Want to make up some more jelly for dessert this week. Not quite as cold as icecream in this winter weather. Also much cheaper! Big fan.
 
@NotASlayer that's not a bad idea, my potatoes at the allotment are new potato sized, so I'll dig a few of them up and make a potato salad, got eggs to use up too so I can boil them to add in.
 
Made a butter chicken today, I had planned to put chick peas in it to bulk it up and forgot! So not as many extra serves unless I add rice.

yeah, to me it's the best way to eat them (admittedly probably not the healthiest).

I've bene doing Indian food in our Instapot. Works pretty well, and I did a butter chicken last week.
 
Food delivery arrives today, then it's meal planning time. I know quiche will feature this week, but haven't decided on what else.
 
Chicken liver was on special and I was thinking of trying to make pate again. But Im buggered tonight so it will have to wait until tomorrow and then I think well if Im going to wait until tomorrow, it could soak in milk overnight... But then if I dont do it tomorrow it would be a waste and a mess.

Gona make another butter chicken tomorrow with a different spice packet and I already dont like it because I thought I was buying a ready made sauce, not a spice packet. It better be good!

Got more jelly hehe 😀 might need to do a extra order this week. I'm pretty well stocked but could do with a big chunk of meat and some fruit. I dont want to be getting hungry and going out during school holidays.
 
My meals for the week will be rice pudding!

I popped to the supermarket yesterday to get washing powder and ran into my mother. And she said go get milk it's all reduced, and we discussed what we would do with 4 pints of milk that had to be used up. So I made rice pudding in the slow cooker overnight. Now I have to portion it up and live off it for the next week! Very cheap meals for me though, as my mother paid for my shopping too!

My grocery order is coming today, but they are not delivering the two things I do the order for in the first place - milk and greens! So once that delivery gets here I will have to do a mad rush down to the coast to buy milk and greens.

Hopefully the Tuesday afternoon aldi trick works again. Luckily I have to get dog food and drop into kmart too, so at least I can pick up a couple of things today that I would have to get later anyway.

Im planning more curries for this week. I lost three kilos after three days of butter chicken haha and wasnt hungry at all! So this week I am making a Rogan josh with lamb and maybe a hot chicken curry. I can get bulk rice at aldi too.
 
I really want to start doing this, at least for dinners. I find when I get home I’m too tired to cook. If I had a dinner to just pop in the microwave that would be great. And I don’t want to eat food from work anymore. I’m so sick of it, and it’s unhealthy and expensive.

I usually eat something simple for breakfast or skip it entirely.

As for lunch, I try to have something on hand that’s easy to whip up, like a sandwich or salad.
