Why given the size of the Romulan Empire that even Romulus star does go super nova they don't simply go to other star systems that are part of that Empire ?

Yes, this one of the biggest examples of sci-fi writers having no sense of scale. For example, if either Alpha Centauri A or B (not Proxima Centauri as it's a red dwarf) were, improbably. to go supernova, it would take 4 years for the effects to reach us. And that's our closest star! With FTL travel it would have been known about for some time before there was an issue. That's enough time to do some serious planning. If it was the Romulans own star (just as improbable as Alpha Centauri A or B), well, the system is toast anyway if you stop the supernova because it lacks a sun now.

Then you have Spock watching the destruction of Vulcan in real time from another planet. A "planet" that is, going by what's shown, at most as far away from Vulcan as the Moon is from Earth.

I would say they were more space opera than science fiction. Star Trek naturally always had space opera tendencies - you can't have FTL travel without them - but the new films dialled this up. The supernova plot and Spock watching the destruction of Vulcan in the first film make zero sense.
Agreed, it's like when in the second film, Kirk dies and it mirrors Spock's death in Wrath of Khan. A pale reflection in the first place, made even worse by Kirk being saved by Tribble blood (if I remember right). Talk about cringy/pathetic.
