First of all post the quote. We need context. I vaguely remember it. I'm not sure it was any kind of stone tablet commandment. And even if it was it wouldn't be the first time anything retcon happened in the Buffyverse. At one time Angel was Spike's sire, then it was Dru, then there was a new definition which took in both Angel and Dru as sire's. Check out how the ages of some of the characters have changed over the years. I'm still not convinced the slayer line passes through Faith in Season 7.

Also I'm not saying Willow and Oz will get together. I'm saying if Joss really wanted them to, he could find a way to make it make sense. There's nothing in the text that makes it impossible.

I just don't see Willow and Oz getting back together. Honestly I think if they were meant to get together they would've gotten back together in Season Four and Tara wouldn't have been in the picture. Also is it that strange to think that maybe, just maybe Willow loved Oz so much because he loved her first. I mean Oz was really the first person to look at Willow and say "Hey I want you." Also we don't know if Willow was having lesbian feelings before, after all Willow wasn't the most confident person before she met Buffy. It was meeting Buffy and going on demon hunts of stuff that broke Willow out of her shell and made her into the strong and powerful woman she is today.
