I think Buffy jumped the shark with Season 7.
The beginning of the season (like N4H said) had all of the fans amped about the rest of the season; we thought it was going to be great, something epic, but it really didn't turn out like that.
Even though I hate Season 6 with a fiery passion, it has something Season 7 seriously lacked: Continuity. From the beginning of Season 6, we saw huge character developments and the writers actually kept the characters in the same mode. Buffy and her feelings of depression and needing to "feel", you could gradually see Xander getting cold feet, obviously Willow's magic obsession, Tara's worrying over Willow, Dawn's kleptomania, and Giles realization that he needed to leave Buffy so that he could take charge of her own life.
From a non-obsessive fan perspective, the show would have jumped the shark either times Buffy died and was resurrected. However, Buffy's death and coming back in Season 1 was good, and Buffy's death in Season Five was spectacular, but I cannot say the same for her coming back in Season Six. It was outright corny. A spell? That's all. How predictable. Joss promised the fans that they would bring Buffy back like nothing they had done before (he actually said this in a TV Guide Article). Yet, we had seen a resurrection spell in Season Five with Dawn trying to bring Joyce back.
While some of the things post-Season Five were great, I think this is when the show reached it's peak. Maybe we got spoiled with "The Gift" and wanted something above and beyond that, but I don't think we got it.
