so, angel is meant to shashu and become human once he fulfills his destiny... but his destiny is to be a major player in the apocolypse... so whichever side he's on, when it's all over he will have completed his destiny and become human (well, if he still has a soul, i guess), but at that point the apocolypse will be over and there won't be any humans left.... has this issue come up at all or am i just over-thinking it?

Well... maybe he's meant to stop the apocalypse, and then he would be able to become a human. Don't know, it aint reasonable to become a human and then die.

No, I think the point of BtVS is that nothing is inevitable.
Also Buffy calls anything which is supposed to end the world an apocalypse. At one point Riley says:
"I'm finding I need to know the plural of apocalypse"
or something similar, and somewhere else Buffy/Giles say:
"How many apocalypses is it for us now"
"6 at least"
So I think most of the end of season battles can be considered to be diverted apocalypses.
