you can't change the random smilies in the box on the right, as far as i know, but if you click 'more' you can see the whole list...but you probably knew that! lol
 
What you can do is go through the [more] section some time when you have lots of time, click on the ones you like, copy and paste them into a text editor, then memorize them, and type them in the next time you need them.
 
I can't even change which ones are there - you get a random selection. If you use them a lot I believe you an leave up the window with all the smilies in it so you don't have to keep opening it every time. I only use the normal smilies so I don't really know for sure.
