Yeah, he would... Buffy was invisible, not impervious to harm. If someone would have shot her, she would have bled. Therefore if Spike was shot and went out into the sun, he'd have roasted like a S'more.
This is probably the case, as moonlight (which is nothing but reflected sunlight) and indirect sunlight don't cause combustion.
Honestly, I think this one is totally down to what you believe because there are simple, yet strong, answers for both sides.
Well, I suppose it depends on how the physics of s'more roasting work. There are generally two ways the gun could have made people invisible. Either it made their cells absorb/reflect light in such a way as to replicate what's behind them, or it could make their cells change in a way to let photons pass straight through. If it's the latter - which seems more likely - then it's possible (or as possible as invisible vampires get) that the lack of contact with the photons could negate the combustion.
Of course, there's also the idea that the sunlight clause is merely symbolic and entirely mystical in nature. This is probably the case, as moonlight (which is nothing but reflected sunlight) and indirect sunlight don't cause combustion. So, I'd say he'd still burn, but it's not an entirely closed question.
