I would like to see it explored but most of the fics I read paint Giles as a very patient man and so in love with every Anya quirk and it just... I'm sorry I don't buy it. Giles had shown impatience with Anya's frank statements on the show and I think a pairing would be far more interesting when both aren't 100% in love with every aspect of each other because let's face it, that's boring and unrealistic and canonically incorrect.

It might have been interesting to have a few episodes where Spike and Halfrek interact, seeing as once upon a long ago William had a thing for Cecily. So much water had gone under that bridge, I think it would have been fun to see a few encounters and some sparks flying.
