I voted for Season Three- I think she reached her peak there (although I desperately wanted to vote for S5- she was uber great there, but she was barely in it, so I felt that would be cheating). All the seasons were fantastic for me though- I mean, BTVS S2 and 3, she had become a more well rounded character, with love and feelings and hurt.
In Angel S1, she learned alot of lessons, still embracing her inner bitch, and quickly learned her path was with Angel.
In Angel S2, she continually made me laugh- "I got a gun and my name is Gunn" dance- and I loved how stubborn she was with Angel. He really, truly hurt her. Probably more so then Xander did. Plus the friendship between G/C/W was uber great.
Season three, though... we learned so much about her. 'That Vision Thingy' showed her insecurities. We learned she wanted to be trained so the guys wouldn't always have to rescue her.. (Hold up- I have to say something I thought was absolutely adorable. When she said that, Angel's like, "You don't think I would? Save you?" I went all gooey when I heard that!) We learned she was more intelligant then everyone assumed (although, I learned that in S3 Buffy)- "No, I'm feeling superior because I'm pointing an arrow at your jugular. And, yes, I realize the irony of killing you with a phallic shaped weapon". She was just great. Besides, when Darla was pregnant, you could sense her hostility towards Angel, her compassion towards Darla (until, ya know, the bitey thing), and her love for Conner. "When I get cleaned up, I get first dibs on baby snuggles!" We learned she would do anything for Angel- "Demonize me, already!"- and that she loved him (the visions could only be passed on by love). It was a great season for Cordy, at least the beginning was.

Although, if you couldn't tell, I really, really love Cor. 😉
