There are some characters on the show that we didn't get to know good enough, because they weren't on the show too long (died, left, didn't matter anymore), or because the story didn't go much into their lives, or just because we weren't told much about them in more details.

Who would you have liked to know more about?
 
Oz. He was such n interesting character! I wanted to know more about his past, the moment when he got bit and his life before he meet Willow! And what he did in his "break" in more details. (Yes, I've read the comics 😀)

Also, Oliva.... like when she and giles met (obviously she knew him in his 'ripper' days - but she wasn't a part of the core 4 who would summon that demon to get high...how close were they? were they ever in a more serious relationship than the one portrayed in the show etc...

Kennedy (no throwing this at me please) ;-) I'd love to see more of her background story.... how she could come from such a wealthy background and be one of the toughest and most grounded and fight ready potentials from the start (say what you will about her brattiness - she was probably the only one who arrived ready to fight...

Faith.... really want to know more about her childhood....

That's all I can think of for now but I'm sure more will pop up later. 🙂

I want a whole show dedicated to him. I want to know about his upbringing, his family, school...everything. I am particularly intrigued by his military history. Why did he join up? What missions was he on? In terms of timeline, I'm think he could have been involved in engagements such as those in Somalia, Yugoslavia-Bosnia, Kosovo, as well as a number of Peace Keeping missions. I want to know how he was he picked for The Initiative.

I want to know about after he left Sunnydale, how he and Sam got involved. I WANT WEDDING PICTURES! I just want all of it.

Riley, Kate, and Giles.

There had to be so so so much more to Riley than we saw and it's a shame we never got to see any of it.

I really enjoyed the character Kate and would have liked to see her stick around. We knew a little bit about her relationship with her father but it would have been nice to see her and Angel get to know each other better.

We know Giles has a pretty intense backstory, I wish they would have shared more of it with us.
 
It would have been nice to learn more about Gile's past, and Ethan's would have fell in with that. So Giles and Ethan. 🙂

And Ben too. It would have been interesting to see how he coped with Glory when he was younger.

I'd like to know more about, human Drusilla, Riley, Giles, Jenny, the Mayor, Robin Wood growing up with a watcher.
 
Ethan Rayne, and Ripper. Please, just any of that rich Giles backstory...
 
I'd have loved to learn more about the characters' families during the high school years. See teenage Xander interacting with his folks, Cordelia with her parents, Oz with his parents, I'd have also loved a flashback of young Giles with his family -
though we're getting that in S9 right now.

Faith's pre-Sunnydale life, both her childhood (which we may be getting now in Season 9) and her Slayer experiences, her relationship with her Watcher, how she ran afoul of Kokistos, and whatever else she did once she inherited the Slayer mantel.

And, of course, the lost time period between the end of Season 7 and the beginning of Season 8.
 
-More about Willow's parents...mainly her dad, who we never saw.

-Faith's back story, I know there's that one non canon book...but I want the "real" story, damn it!

-More about Giles! I'm pretty content with the info we received, but more information wouldn't have bothered me 😉

-I wanted to know more about where Dawn came from, exactly. Supposedly season 7 was supposed to focus on that, originally.

-Oz. We didn't really know anything about his life. We know he had a cousin named Jordy who bit him haha, that's about it.

-Ben. Was he born with Glory...a part of him? Did he have to grow up that way? What if he was on a date, and right as he was about to kiss the girl, Glory shows up.
Or, she shows up while their kissing. Ooh, that's good.

-Kennedy. While I am not a huge fan of her character...I am curious!

-Jenny. Kind of...

-Drusilla. I mean, what exactly drove her insane? Or was she already suffering from some mental illness...and her entire family being slaughtered made it worse?

-Gwen. What the hell happened to that little boy!? Did he die? Suffer brain damage?

-Did Xander's parents own a stove?

-Cordy. Did her mom ever recover from Epstein Barr? Crucial stuff.

-Buffy's dad's secretary. Did she know he was married? That tramp!
 
Kendra, Oz, and I feel like there was more to Anya - or at least there could be - then what we got. Whistler? Snyder, too.
 
Liam. We know so little about him. When he learned to paint? How was his relationship with the sister Kathy. Which was his surname? O'Connor?

..and moreover

I wanted to know the origin of the tattoo of Angel. When was it made? was Angel or Angelus that he decided to tattoo a gryphon on his shoulder?

How did Connor to survive in dimension Quortoth? there were other humans? was a so small baby, :baby: I wonder how did Holtz to feed a newborn (with milk of demon?) 😛

Lots of good choices have been brought up so far, but I'm going to go with Justine from Angel. Specifically, what she did with her life after Wesley let her go. Somehow I just can't see her giving up on killing vampires.
