I don't think it's that hard to beleive that they can communicate that way. Maybe it's actually an easy magick thing to do and Willow taught it to the gang and since they are so close, it probably makes it easier to do

Why can they suddenly talk to each other mentally?

lol I thought the same thing DrewBarroo, you'd think that if they had the ability to communicate with one another using only their minds they'd have done it more often throughout the series... It's like someone said before, the writers just conveniently forgot about this power until they needed to use it, which i guess they're entitled to 🙂
It could be argued, however, that they didn't need to use that form of communication often, and only did so when they absolutely had to... Personally, I can't see Buffy and Xander condoning the frequent use of 'magickal mind talk' when they could just as easily talk to one another, perhaps they didn't want Willow to use her powers when she didn't have to... I can breifly recall Tara saying something like "Why use magick when you can do something naturally", but in this case, that wasn't able to happen without the potentials and the other scoobies finding out what was actually going on.

I always thought that that scene in "Showtime" was an example of how close Buffy/Xander/Willow had become. I mean they've shared essences. And when the going got tough and they needed to plan quickly, they used that power of closeness.

I also found it a little strange at first that Buffy and Xander were communicating telepathically with Willow but I just assumed that Willow was using her magic to open the door for Xander and Buffy to do it. Buffy obviously started it and Willow answered and transmitted so Xander could hear it, also its the Hellmouth. If a girl can turn invisible because she feels it from the rest of the student body and it happens then I'm sure Buffy and Xander can be telepathic even if its for like 2 minutes and with Willow's help.

The first times we saw it happen were the end of season 5 and the beginning of season 6. It was useful in these situations, yes, but remember how perturbed Xander was by it? Minds are a very private place (which is why nobody wanted to be around Buffy when she could hear thoughts) and even if Willow could only hear thoughts directed at her, it was probably way creepy. And kind of unnecessary once Buffy was back kicking ass..she didn't really need a navigator while tracking vamps, did she? She had the whole vampire-senses thing going on. Anyway, I'm sure none of the Scoobies really liked Willow in their brain, as useful as it might have been. Especially as Season Six went on and they began feeling like she was using magic too much..I doubt even S6 Willow would have been tapping into anyone's brains and shoving her overuse of magic down their throats. Then, badness, Willow messes with Tara's brain, decides to swear off magic, so obviously she wouldn't be telepathically communicating anytime soon. Then, major badness at the end of Season 6, and all Season 7 Willow is very careful about how much magic she uses, focusing on good earthy stuff and non-invasive spells, so I don't think it even occurred to her to try it again, and I don't think the Scoobies would have prompted her to do it either.
So, it sort of makes sense to me that we only saw them do it a handful of times, as useful as it may have been.
Also, I agree that others could initiate the communication. Sort of knock on Willow's mind door and she could invite them in. Different from what Buffy went through in Ear Shot, because Willow could control this.

Oh, I just remembered, didn't Dark Willow use this again too? When she was bound by Giles' theory testing, she used it on Anya in an entirely abusive and manipulative way. That could have scared Willow off even more throughout S7

In Season Five, Willow learned how to speak telepathically, we saw that in "The Gift" (but only Spike heard her.)
In "Bargaining", Willow was guiding the gang telepathically, apparently now speaking to several at once.
In "Two To Go", Dark Willow tells Dawn (while they're at Rack's place) "Shh. You don't have to talk. Just think real loud; I can hear you."
In "Grave", she speaks to Anya while held in Giles' stasis field, then speaks to Buffy again later while they're some distance apart.
It seems fairly obvious that, like everything else she attempted, Willow worked at improving the ability until she took it well beyond that first basic communication in "The Gift". Unfortunately, she seems to be permanently on "receive" now, which might be one reason she looked so tired through the first part of Season Seven - having to tune out all of those thoughts so that she doesn't go mad from them (the same way Buffy was being driven mad in "Earshot") would have to wear on her, but it's something that the "real" Willow would do after her crash, since she's basically a decent person. Buffy does exactly what Dark Willow told Dawn to do: she "thinks real loud", and Willow does, indeed, hear her. For the three-way conversation in the kitchen, it's Willow acting as a "substation" to allow Buffy and Xander to speak through her.
