Well just to be sure I checked, got the transcript and its from "Seeing Red".
Spike:

with Buffy...
This isn't the way it's supposed to
be. It's the chip. Steel and wires
and silicon. It won't let me be a
monster. And I can't be a man. I'm
nothing.
The Chinese Slayer sequence was a straight forward flashback as he narrated to Buffy, we saw the visual. He spoke that story aloud so the part about feeding from her wouldn't have set off the chip, no need to worry.
But with Nikki he drew both the audience and Buffy into that final moment to emphasize her moment of death with an actual reinactment move by move, but by talking directly to Buffy he as already altering the "story" since I'm pretty sure back in the 70's he didn't stop to talk to Buffy. Whatever happened next he probably considered irrelevant to reinact because Buffy would know fine rightly what came next. He told her about feeding from the Chinese Slayer simply to describe to her the first time he had done so, no need to go over it again with Nikki, leaves out that part of the story, makes his point to Buffy instead.
So in the "real" event he probably just killed Nikki, fed and left with his prize.
At least thats probably what happened, unless theres a Season 8 comic that shows a full "flashback" of the event we'll never know exactly what happened.
