I feel like this has been asked before, I just don't remember the answer.

Anyway, in season 7 we saw that Willow could regrow her own skin with meditation. Then in season 8 we see that she can heal other people. So, why has she never healed up Xander's eye? Do you think it's because the actual eye isn't there anymore so she has nothing really to heal?

Just at a guess, I would say that her powers are limited to repairing something like human tissue at an accelerated rate, because doing so is only enhancing a normal function (healing) by speeding it up and probably eliminating scarring. Xander's eye, however, either because of the original injury or resulting medical treatment, wasn't just damaged, it was destroyed completely, leaving nothing behind to repair.

That having been said, however, I see no reason why Willow couldn't work some sort of spell that would allow an artificial eye to actually function as well or even better (as in, it would let Xander see supernatural auras, the way that Tara saw that Buffy's aura was all messed up when Faith hijacked her body) than the real thing. Something like that would make a great addition to the series, and finally give Xander his own special "power."

But the eye patch just looks so darn DASHING...

Yes, I think the eye-patch is Xander's trademark it makes him look badass.
Serves as a reminder for what happened in the past? Not sure, though it's a good point. Any healing of his eye could have easily been explained by magic, so it feels like Xander made a conscious effort to keep himself one-eyed.
 
As for a less in-universe explanation, I know I read that Nicky Brendon had asked Joss back at the end of the series to let Xander keep the eye patch. He didn't want Xander to magically heal in any future incarnations.
 
I definitely like Xander with the eye patch, but it's all kind of moot now, isn't it? If she would've healed it, it would've gone back to s7 status with this current issue!
