Off the top of my head this is what I think of.
Buffy:
Season 1 - The 90's fashion is fantastic alongside Buffy's younger carefree attitude. Also, everything about Prophecy Girl.
Season 2 - Proper evil Spike. Seeing the first glimpse of ticking time bomb Giles.
Season 3 - Graduation Day 1 & 2, seeing SHS come together to save the world is incredible. Wesley getting knocked out seconds into the fight. Giles destroying the library. EDIT - HOW DID I FORGET BAND CANDY RIPPER GILES?!?!?!?!?!
Season 4 - Hush. Tillow. Retired Giles. Restless.
Season 5 - Buffybot. Glory's outfits.
Season 6 - OMWF. "I'd like to test that theory"
Season 7 - The feeling of watching Chosen for the first time returning to me every time I see it. All the big bads returning as 'The First'.
Angel:
Season 1 - Rogue Demon Hunter Wesley. Wesley and Angel dancing scene.
Season 2 - Cordelia in her princess outfit. Darla being completely flawless.
Season 3 - Wesley & Dark Wesley. Badass Lilah.
Season 4 - Wesley & Dark Wesley. Angelus. Lilah.
Season 5 - SPANGEL. Illyria. Wesley and Fred being happily together for an entire 4 minutes of screentime.
Buffy:

Season 1: The Master's charisma and Luke is so badass, I wish he had more time in Season 1.
Season 2: Angelus and 'Band Candy'
Season 3: Hard to chose as I really liked this season. Faith, the Mayor and the final fight scene with all the students was kick ass...'Now!' and the students reveal their gear...gave me chills. and then 'Flame Units!', I was like What?!
Season 4: Beer Bad and Thanksgiving episode 'You made a bear, Undo it! Undo it!'
Season 5: The suspense and mystery involved with Dawn. I remember when she was introduced and her and Buffy yelled out "Mom!" I was like wait, what?!"
Season 6: The Trio and Dark Willow. When she was torturing Warren I was cheering.
Season 7: Final fight in the final episode until Spike did his Ironman impression and pulled a city wide 'Uni-beam' out of his ass.
Angel:
Season 1 Wesley was priceless with his clumsy comedy.
Season 2 Pylea episodes
Season 3 I liked the concept and idea behind Conner coming back as a teenager and Angel having to win his son over. But eventually I was like 'Enough kid, they love you already so settle down'.
Season 4 The beast arc (not including Jasmine crap)
Season 5 Final episode, especially the way it ended. Oh and I wanted Illyria to have her way with me and throw me around.
