ok, i guess i'll start,
Illyria and Wes, 'Not Fade Away' - this is the part in the episode that ALWAYS makes me cry, without fail. Illyria's line 'Would you like me to lie to you now?' is so full of emotion for her, but it's Wes's relpy 'Yes' that really gets me, because he knows it's the end, and he's willing to accept a lie that he wouldn't accept early in the day.
Connor 'Origins' - when he says 'I learned that from my Father' and then walks away, you know that he does remember, and the look from the elevator, so powerful. ok, so i'm a big Connor fan, sue me!
Buffy and Spike 'Tebula Rasa' - the last scene with them kissing. not only was it a huge moment for Spuffy fans, but it left us all with questions. did she run after him? did he come back? was it both?
Cordy and Gunn 'First Impressions' - stupid little scene, but i thought it was funny. the scene with them in Gunn's truck, when he says to her 'Paging Ms. About to be Thrown out of a moving vehicle.' lol those two are just so funny together sometimes.
THE scene in 'Family' - when Buffy and the others stand up for Tara. such a sweet scene, and the look on Tara's face when she's asked 'Are you happy now?'

Not Fade Away - When the apocolypse approaches, (literally) and Angel's line, "I kinda wanna slay the dragon." It's always just seemed so powerful to me, for an odd reason. Maybe because it's the last line... hm. And the credits.
Chosen - Buffy and Spike... when they hold hands and they burst into flame. (As I'm typing this I'm finally noticcing the long-running metaphor - heh) "I love you." "No you don't, but thanks for saying it.

When Buffy pokes Angel with the sword.
When Angel and Buffy stare at each other after graduation, and he backs off into the shadows.
Spike's monologue in the Church. Great acting from Marsters.
The scene in Never leave me, in the cellar when Buffy tells Spike she believes in him..love that scene.

angel speech in passion... it was really beautiful... i cried!
the swords fight in becoming 2 and when buffy says close your eyes and kills angel.
buffy and spike in dead things.. that scene when she's at the door of spikes crypt and touch the door in the exactly instant hes touching too. cause he could feel her. =)

Becoming Part 2 > I loved this episode... my favorite scene of course is when Angel gets the sharp end of the sword, just after getting his soul back... I cry everytime I watch this ep! I also like the song used at the end of this ep "Full of Grace by Sarah McLachlan"
Hush > come on! this episode is classic, and who could forgot those moments when Giles gives his little presentation.... Xander thinks Willow is trying to say 'boobies' and Buffy gets out her stake and they all get the wrong impression.... mhm 😉
Beneath You > as Dzhugashvili posted above, Spike had an awesome monologue here.. the one in the church, where Buffy founds out Spike has a soul!! awww... then Spike hugs the cross... *see Dzhugashvili's avatar*
The Gift > I couldn't leave this scene out. When Buffy gives that speech to Dawn, "The hardest thing in this world is to live in it... live.... for me... etc etc" you get it ... lol but it was soo sad.. I always cry.. and it has flash backs of Buffy jumping off to save the world.. and the scoobies faces just make you wanna grab the tissue box.. especially Spikes!! 🙁
The Body > The moments where Buffy is in shock after seeing her mother dead on the couch.. the silence just created that tension between the audience and the show... and it was just so intense... i loved it.. makes me cry also!!! I also like Willow panicing over not being able to find the shirt Joyce liked.. and Xander punching in a hole in the wall.. and Anya having her random outburst of not understanding the whole death thing...

Oh I hate having to choose these things, there's too many! This is my Angel list:
1) Season 4 - Apocalypse Nowish - Beast Fight. My least fave AtS season but my fave scene of all time. Best bit - Wes with the shotgun.
2) Season 5 - You're Welcome - Angel vs Lindsey. After many rewatches I 've decided this is the ultimate one-on-one fight scene.
3) Season 5 - Not Fade Away - Final Scene. The apocalypse is coming?! A very powerful ending.
4) Season 5 - Shells - End Montage. This is so sad, much more so than Fred's death itself imo.
5) Season 1 - Hero - Doyle's Sacrifice. Such a shocker at the time, still gets me know even though I know it's coming.
Buffy:
1) Season 5 - The Gift - Pretty much all of the second half, but to pick one moment, Buffy smashing the hell out of Glory with the hammer.
2) Season 3 - Graduation Day - Buffy vs Faith. The ultimate showdown between the slayers, what's not to love?
3) Season 6 - Seeing Red - Final scene. Just when I started to get bored of the season, Buffy gets shot, Tara gets killed and Willow goes evil! Awesome.
4) Season 5 - The Gift - Opening montage. Would have worked so well in the the show finale.
5) Season 7 - Dirty Girls - Potential Slaughter. Not much I like about season 7, but seeing a few of those potentials killed off is very satisfying. More would have been nice though...

On the actual topic though, as Croft Storm above, i'm going to separate the two shows for my favourite scenes.
Buffy:
5 - Giles return 'Two to Go' where he'd like to "test that theory".
For me, personally, its the most exhilarating moment of the show.
4 - Giles returning home in 'Passion'. That to me is THE darkest moment of the entire show
3 - Giles and Willows discussion in 'Flooded'. I found that scene magnificently brilliant in its attempts to show the beginnings of the true nature of what Willow was becoming.
2 - Giles and Buffy discussing what it means to be a leader in 'Lies my Parents told me'. I love the relationship of Buffy and Giles and to me, this scene was a stick in the side. We know Giles means well, but he is betraying the one person he shouldn't. I love it.
1 - Giles going after Angelus in 'Passion'. I felt that this and number 4 should be separated because they are both fabulous scenes for different reasons. I just love the fury and venom of this part, the reactions of everyone involved and the very fact that while i'm sitting there, i'm blaming Buffy. I'm thinking that had Buffy done what she was supposed to do, this would never have happened. Yes, thats wrong, and I sympathise with Buffy and her Angel/us dilemma, but still, through her own uncertainty, she caused this.
Wow, they were all Giles....ok, seems like i'm gonna do one for each character. I'll do the rest in a bit.

Buffy and Faith 'Graduation Day PT2' - the dream squence. i loved that scene. it's still confusing even now to work out if that really was Faith, or a figment of Buffy's imagination. or was it Faith's mind they were in? we'll never know. also, the first mention of Dawn.
Buffy and Faith 'This Year's Girl' - another dream squence. when they made the bed together, and the mention of Dawn again.
Xander and Willow 'The Pack' - Doesn't anyone else see what a great villian Xander could have been? Nick's acting in the scene where he tells Willow that he never wants to see her again, or whatever it was he said, was great.
Buffy and Xander 'When she was Bad' - the dance scene in the Bronze. such a very evil Buffy.
Anya 'The Body' - her outrburst in Willow's dorm room wasso full of emotion. wonderful acting from Emma.
Angel
Connor 'The Price' - at least, i think that's the ep. When Connor comes through the portal and says 'Hi, Dad' then attacks Angel. great scene.
Faith and Wesley 'Salvage' - When Wes tells her that Angelus is back and Faith says 'Step away from the glass' and crashes through. very nice.
Spike and Angel 'Damage' - in the hospital ward when after Spike's hand have been reattached. and Angel's telling him not to feel bad or something. and Spike says 'What, 'cause her's wasn't one of the families i did kill?' and then Angel says something like 'She's innocent' Spike's reply 'So were we, once.' so underplayed and often forgotten.
Cordy and Wes 'Fredless' - i think that's the ep, when they were doing the riff of Angel and Buffy...lol, so funny.

Graduation Day, part 1: Buffy and Faith's brawl. When Buffy turns off Faith's music, you just know that something big is going down. This is possibly one of the moments where I actually like Faith. But more so, I like her getting beat down by Buff.
Helpless: The part I like: Where Buffy proves she's not so helpless. Filling Kralik's glass with holy water and just sitting and waiting. Such genious here! When she coyly pulls the holy water bottle out of her pocket and flashes it is great!
Prophecy Girl: It starts off with the theme songs blaring and watching Xander, Angel and the newly revived Buffy walking to the school. Buffy careless knocks a vamp on his behind. And then proceeds to tell the Master has has 'fruit punch' mouth and send him straight back to hell. Classic.

This is probably true for me too but just going off immediate reaction to the question...
Buffy
1) The amazing "vampires like to talk big" conversation between Buffy and Spike in Becoming.
2) Spike and Joyce having a nice cuppa and a chat in Lover's Walk.
3) The fight at the end of Lover's Walk (the only time Buffy, Angel and Spike would ever fight side by side).
4) The Winnebago chase in Spiral.
5) The battle in the vineyard in Dirty Girls
Angel
1) Spike's "nancy-boy hair gel" speech in In The Dark.
2) Doyle's sacrifice in Hero.
3) Darla's sacrifice in Lullaby.
4) The battle with the Beast in Apocalypse Now'ish.
5) Has to be the final scene of Not Fade Away. Unbeatable.
No doubt if I rewrote this tomorrow half of them would change but those ten moments in Buffy/Angel history are all worthy of mention.
