I can't really cook. At all. But I love french toast, or just a lovely greasy fry-up in the morning.:biggrin: Not every morning though, or you will die...:lol2:

A good breakfast HAS to have some biscuits and gravy. Chicken fried steak and hashbrowns are also a good start.

As promised, the recipe for the traditional and super delicious Puerto Rican classic, "tostones" or Fried Plantains

You'll need large unripe (green) or barely ripe (slightly yellow) plantains (a single plantain will make 5-6 tostones). Peel and then slice the peeled plantains diagonally into 1" slices. In a 12-inch nonstick skillet heat 1/2-inch oil over moderate heat until just hot enough to sizzle when a plantain piece is added. Fry until tender and just golden, 2 to 3 minutes on each side. Transfer plantains to paper towels to drain. Remove skillet from heat and reserve oil. Using a tostonera (a press), slightly mash each piece to about half an inch in thickness. If a tostonera is not available insert the pieces between a folded piece of brown-paper sack (paper towel will do) and press down using a saucer. Dip each piece in warm salted (garlic also if you like) water. Heat reserved oil over moderate heat until hot but not smoking and fry flattened plantains until golden, about 3 minutes. Remove from the oil and drain on paper towels. Salt them and enjoy! 🙂
 
I'm sorry, but what are plantains? (I know, google, but I'm lazy) I't looks really nice, though 🙂

Yeah similiar to bananas but green, unripe and thus not any where near as sweet.
I cook all the time, I work in a youth club so I make lots of cakes and especially macaroon which is made with potatoes and icing sugar and vanilla flavoring and food dye 🙂


I also cook christmas dinner each year its fun I enjoy it x
 
Here's my recipe for chicken strips. This feeds 2 people very very well and would work for 3 if you had lots of fries or something to go with it.

Ingredients
2 boneless chicken breasts (or 12 chicken tenders--some stores sell them pre-cut)
1 cup Italian style breadcrumbs
1/4 cup shredded Parmesan cheese
paprika
garlic powder
1/3 cup vegetable oil

Directions
Mix the bread crumbs, Parmesan cheese, a healthy sprinkle of paprika, and an equally healthy sprinkle of garlic powder in a baggie. Set aside.

Slice chicken breast into strips

In a small bowl, combine oil and another healthy sprinkle of garlic powder

Dip chicken strips into oil (mush them around real good so you get garlic on them, too), then dump them in the bag and shake it until the strips are coated. I usually do 1-2 at a time, depending on how big the strips are.

Grease a cookie sheet and lay the strips on it. Bake at 425 for 20 minutes or until brown and crispy.

Serve with ranch dressing (my favorite), BBQ sauce, or whatever you usually dip your chicken nuggets in

NOM!

WARNING: This is very very messy and works best if you have one person coating the strips and dumping them in the bag and another person shaking the bag; when I do it myself, the outside of the bag ends up all oily and nasty and then it gets all up my arms and all over everything

The best apple pie I've ever had... and it was a hit with my new extended family on DH's side (first Thanksgiving married, yay!) 🙂

Apple Pie
*8 tart apples (I suggest 3 granny smith and mix-and-match 5 others... really, this is the secret to the greatness that is this pie)
3/4-1 C sugar
2 T flour
dash salt
1 t cinnamon
2 T butter
1/4 t nutmeg
pastry recipe

Pare and slice apples thinly. Mix sugar, flour, salt and spices. Add to apples. Put into 9" lined pastry pan. Dot with butter. Adjust crust. Bake at 400° for 50 minutes.

*If you don't use tart apples, add 1 T lemon juice

Had full roast yesterday EB, for the first time in ages.

Stuffed Roast Organic Chicken (stuffed with Fois Gras, chicken liver, onion, chestnuts, prunes)
Roast Parsnips and Roast Potatoes
Creamed leeks
Pan fried kale with pancetta and garlic
glazed carrots
peas (toddler monkey likes them)
Mashed sweet potato and swede
Cauliflower cheese
Meat gravy juices

Could really have done with an Apple Betty and custard for pud but just ran out of time....

I am a real lil Nigella when I get going (that's Martha Stewart to out cousins across the water)

And for info, white gravy is the most amazin thing (and what is on top of the biscuits I posted before). It's made from flour, grease, milk, sausage, and a dash of pepper. Anyone who has never tried it, come to my house STAT for a wonderful, yummy, good, AMAZING home cooked meal.

Okay, since it was requested in the happiness thread, here's a recipe for Russian tea cakes 😀 They're really easy to make, and that's coming from someone who can't cook for her life (although I am pretty damn good at stirring. It's one of my special talents.)

Ingredients:
1 cup of salted butter
1 teaspoon of vanilla extract
6 tablespoons of confectioners' sugar
2 cups of all-purpose flour
1 cup of chopped walnuts
1/3 cup of confectioners' sugar for decoration

- Preheat the oven to 350 degrees Fahrenheit (175 degrees Celcius).
- Cream the butter and vanilla in a bowl until they're smooth. Then, mix in the 6 tablespoons of confectioners' sugar and 2 cups of flour; stir them into the butter mixture until it's blended. Mix in the chopped walnuts, ooll the dough into little balls (*snicker*...I'm so mature), and place them on a cookie sheet.
- Bake them for about 15 minutes. Take them out and let them cool a little (but not too much...if they're not warm, the sugar won't stick), then roll the cookies into the 1/3 cup of confectioners' sugar.

And voila!
 
In the spirit of the holidays, and because I think eggnog goes great with Russian Tea Cakes *steals CrazyFlake's recipe* here's our recipe for eggnog (Warning: Alcohol Content!):

10 eggs, separated. Add 1/3 C. sugar to the egg whites and beat until frothy but not quite soft peaks. Beat the egg yolks. Add egg white mixture to egg yolks, mix together. In another bowl (big enough to hold your entire eggnog batch), beat 1 quart of heavy cream until soft peaks form. Gradually beat in the egg mixture. Add 3 cups of brandy (750ml) and a cup and a half of rum. Sprinkle with nutmeg and/or cloves, to taste.

This does make 6 quarts, which, of course, Mr. Crayon and I realized after we made it, and there are just the two of us, so we'll be drinking plenty of eggnog, I suppose. 😉 But it's good! Although, if you want a less booze flavour to it, put in a little less brandy. Or add some milk to your glass. But all in all, it's good. 🙂
 
Hey, let's breathe some life back in this thread!

Here's a recipe I completely made up myself; it has no interesting name but for now I will name it 'Poulet au miel, avec d'aubergine, fromage mozarella et tomates', which is french for chicken with honey, with aubergine/eggplant, mozarella cheese and tomatoes. 😉

Here's how it works: get as many chicken breats (or fillet, or any other soft bit of chicken) as you need, bake them in a frying pan. Squirt over it a generous amount of honey and add some herbs like basil, oregano, whatever you like. When the chicken is almost done, put slices of aubergine and tomato in the pan with it (if it don't fit, take the chicken out when done and put it somewhere warm so it doesn't cool down and bake the aubergine and tomatoes quickly in the liquidy, honey-and herby stuff that's still in the pan) When everything is ready, place the chicken and the tomatoes on a plate and put a slice of mozarella cheese on (or under or between) the slices of aubergine and so that it looks neat and proffesional. This way, the mozarella will partly melt but not entirely which is nice. It goes perfectly with pasta or spagethi or somethin like that.

That's it! It's really easy and looks quite good, too 😉
 
I'm not the best cook in the world... I can hardly make fried eggs without setting something on fire...But strangely desserts are something I have a gift on making. I can make chocolate mousse, ice cream, gummy worms, all sorts of sweets... without one mistake..I am like the dessert master! That's why I call myself the candy queen 😛 cos it's actually something I know how to handle...
 
Give me a skillet and a can opener and I can survive between trips to Burger King.

I do have a recipe, if you could call it that, for a very fast pizza that my granddaughter likes. Split a piece of pita bread, put either tomato sauce of pre-mixed spaghetti sauce on top of the two halves (crust to the bottom) and top it with crated cheese (She likes hers plain, but you could put anything on it that you might have handy) and toast it in the oven until the cheese melts. Then, if you don't like it, you can feed it to the dog and go to Burger King.
