Man, there are so many. I think that in just about every episode, even the ones that aren't as strong, there are at least a few hilarious lines. I watched "Some Assembly Required" the other night, not usually viewed as a great episode, but there were some great moments to it I'd forgotten. Angel being jealous of Xander and not knowing how to deal with it, but still trying to hide it, was awesome. And towards the end, when Xander saves Cordy from FrakenDaryll, and she tries to thank him, he totally brushes her off, only to complain to Willow about how girls never notice him. There are so many moments like that.
Thinking about it a bit more, there are so many classic Principal Snyder moments. Pretty much every time he's on screen I laugh. I don't know what Armin Shimmerman is doing now, but he should get some sort of lifetime achievement award for that role.
Doing my latest re-watch, I'd forgotten a little about all the early Bangel moments, and those are always awesome to see again. When Buffy and Angel kiss at the end of "Angel", and you see the cross burnt into his skin, that was pretty powerful.
Oh, and I completely forgot! Which is, you know, the theme of this question, Xander punching out the clown in "Nightmares". That was priceless!
