Probably just overworked. With a few exceptions, All American mature chain sit down restaurants are having financial problems. Partially, these restaurants are relics of a different age when the middle class had larger families and more money. Partially, it's because they are connected with old white people culture, and are having difficulty connecting with younger, less white populations, who probably don't have the money to spend on them.
But the real reason is, business school graduates are notoriously thintelligent, and can't conceive of a problem outside their silo. Marketing will attribute the problem to marketing, administration will attribute the problem to lazy workers, accounting will see it as a money issue. Running a restaurant right requires an entrepreneur with vision, who can connect with people, and understand their needs and wants. At least, that's how I see the issue.
