toast! with some ribena, not overly fond of ribena, but it's kinda fruit juiceish!
 
I just now finished dinner. Savory Tart with ricotta cheese and spinach (not bought as ready meal, but made by me, including the puff pastry)

I had cottage cheese and figs for dinner.. Those tarts are making me hungry.
 
Granola bar, orange juice, box of raisins.

Didn't finish it (the granola bar was kinda...cardbordy.) and am now hunting for chocolate. 🙂

My chocolate is strictly organic and raised in a positive environment- all so I can devour it. 😀

For anybody who's interested I can two Kit-Kat's and a Crunchie bar. I'm a pig.

I'm more than happy to share recipes! Nothing beats tried and true recipes, you know they'll taste great.


The topping is a bit different though and includes ricotta cheese, Greek yoghurt, egg and cheese with a sprinkle of nutmeg.

The filling is;
1kg of beef mince- brown mince in fry pan with 2 tablespoons of oil
1x brown onion- add once mince is browned

Add zuchinnis, carrot and mushrooms
Once softened, add 800gms of chopped tomatoes (tins) and add sauces, sugar, salt and pepper
Add approx 150gms of frozen spinach

2x zucchinis
1x carrot
8 mushrooms thinly sliced - smaller sized mushrooms
Dash (roughly 2 table spoons) of worcestshire sauce
1/4 cup of sweet chilli sauce
1 table spoon of sweet soy sauce
Sprinkle of White sugar
Salt and pepper
Fresh lasange sheets

White sauce recipe;
50g of melted butter
Add 2/3 cup of plain flour
Adding slowly 3 cups of milk, adding 1/2 cup at a time waiting until it thickens before adding the next batch. Once thick, add 300 grams of ricotta cheese and 1/2 cup of grated cheddar cheese.

Start with a layer of lasange sheet, mince and then a layer of white sauce. Repeat process until you run out of the mince mixture.

Mix 200gms of ricotta, 1 egg and 500gms of Greek yoghurt in a bowl until combined and spread on top. Sprinkle grated cheese on top, sprinkle nutmeg and bake for approx 45 mins in 180 degree celcius oven.

This lasange is an awesome recipe and its flavour is different each time it's made. The measurements of the sweet chilli sauce, worsctershire and sweet soy are just estimates as we change it up each time, depending on if we want it spicier or sweeter.
I hope you guys enjoy it as much as we do. I would upload a picture of the finished product but I'm not sure I can do it on my phone.

Half a chocolate orange and a cuppa coffee. Trying to dispose of the left over Christmas foods before the diet on Monday lol....that's my excuse anyway.
