Meal Planning #3

I'm trying to make a veggie bake, minus pasta and cheese. Im not sure how it will turn out, but it does seem to be sticking together so far. Its got a few more minutes to go in the oven. If this works, I will be very happy because it was all frozen and tinned veg. The most expensive part was the butter. I will have it with ham or cheese or a sauce, so that it can be a base and still able to switch it up so I dont get bored. It should freeze good too - but its all yet to be seen! Fingers crossed.

So what happened?!
@hoponlilmama turned out more like a light and fluffy mash than a light and fluffy slice. Next time I am going to try for muffins or savory scones rather than a slice. Needed less butter, more flour and probably one less egg. I'd rather make it eggless but I thought I needed the egg to stick it together - I was wrong, it was not going to fall apart, it just didnt get to a consistency where I could slice it up and freeze it. I had to scoop it with a spoon to freeze it haha.

But, the flavours were great, tasted yum. I have another order of veg coming tomorrow and I will try again. But this time I did get fresh veg because its slightly cheaper. And all the tinned and frozen veg comes from belgium so I'm not sure if thats good. I also have pumpkin coming tomorrow too so that would bulk the mix up by a lot for cheap.

With tinned vegetables try to look out for ones that are organic and/or with no added salt - if the budget allows, of course.

Sounds like on your next try you'll get the recipe exactly how you want it!

Literally not available here hahaha. Very few options where I am. Less options as the world seems to get more options.
I worried that stuff packaged in belgium probably was grown and washed somewhere else. The fresh stuff is mostly aussie, and it wasnt too much harder to prep yesterday, but it was a good hands day yesterday. I can do a much smaller batch next time.

These worked out well in the mini muffin tray, but it was such a big batch, I'm probably going to be sick of this forever haha.

Tonight I have chinese food. And I got a bunch of wafer biscuits free in my coles order the other day - didnt order them, was a mess up. Now they are all mine.

As long as you give it a rinse I'm sure it's fine.
A shame you don't have more options on offer, but in terms of vegetables there's always frozen!

That's a nice little bonus! 😉

Yeah the frozen veggies are packaged in Belgium too lol Doesnt say where they are grown. I worry they've been washed by someones feet in a field of grossness before being exported for packaging haha. I try to get aussie grown, fresh food but dont always have the ability to prep it or store it. I try to get local meat as well, when its on special (and I mean like really local, raised within 60kms of my house).
I dont mind tinned pineapple from the US and dried prunes from the US are the nicest too.

Thank you for that mental picture. 🤣

Now you can have a physical picture too 😀
This is the least gross I could find. For some reason instagram keeps showing me all these food preparation videos from countries with much lower hygiene standards than my own. I am never eating food packaged in Bangladesh!

I'll pass on watching!
Going to do ham omelette for dinner tonight, probably with wedges.

Then sausage and mashed potatoes tomorrow for a few days, I'll need to raid the freezer for Friday unless I do pasta.

Got local kransky sausages in the oven with potatoes, enough for leftovers tomorrow. I probably should add some greens... we'll see. Wasabi is green.

This is to remind me of the weekend cooking plan that I am totally going to forget. Plan is make big spag bog tomorrow. Beef is already defrosting in the fridge. Also make another quiche and a batch of pumpkin scones (maybe with green beans?) once the eggs and pumpkin get here.

How long does an open jar of curry paste last in the fridge? I think it will be ok, it wouldnt be a month old yet. I couldnt use the whole jar last thai green curry cook cos its too strong! So there is half a jar left. I better order more coconut milk.

Honestly, I've seen two week to 3 months depending on the brand. One thing that works for us (when we don't know how quickly we'll use it) is freezing some.

I got a chunk of ham on special so I want to use that in the next quiche. It was cheaper than bacon. I probably have far too much to use just in quiche though so will have to figure out what else I want to do with it.

I wasted too much food over the break, got too much, prepared too much, and ended up throwing out one avocado, one tomato, one beef pattie and some pumpkin cos I just couldnt get through it all. My freezer is still packed to the brim. So this weeks grocery orders will be heavy on things like dog food and paper towels rather than any more food for me! Need to eat what is in the freezer.

Why in the heck are groceries so expensive? I'm not paying $2 for a LIME. FML.

Anyways, I found a cool vintage Crock Pot cooking book! I'm going to try out some recipes from it.

I wasted too much food...
I hate throwing out food. I just had to throw out several bananas. I felt bad about it. Not even the dogs wanted them...

Speaking of paper towels, I accidentally ordered 2 20 packs instead of toilet paper. I am definitely not in need of paper towels for a while, lol.

Also, I am curious. How much do you pay for dog food monthly? How many dogs do you have again? The food I feed my dogs has increased so much in price, it's insane - I'm about it start making their own food, damn. I have three dogs (and a cat!) now, and I'm definitely feeling the expense.

Could the bananas have been made into banana bread? That seems to be a common use for bananas that are far past it.

I have two dogs who are about 6kgs/13lbs. I feed them Prime roll for dinner, I stock up when it is $10 a roll. One roll is about 2 weeks of dinners. They also get dry food biscuits in the morning and a dental chew for lunch. (They have little tummies so do need three meals a day!) The dry food was cheaper for me from a pet store because I have a loyalty card and sometimes they have deals like buy two bags and the second is half price. I take advantage of that and use loyalty points when I can.

I tried making their food before but it was too hard for me to get it consistent, and the poodle seems to need more fat than the cheap kangaroo mince offered her, yet beef mince was too fatty! So it was easier for me to stick to the commercial chicken mix of the prime roll. I'll give them treats from my food too, like fruit and veg or meat. They get a LOT of treats during the day hahaha.

I still have ham left, but I used the majority of it in the quiche and pinwheels and ham and cheese scones. I put chives in the quiche, which I dont usually do, but they needed picking from the garden. I didnt like the quiche when I first tried it warm from the oven, but its much nicer today, cold, with the chives. I will use less next time. I knew I was chopping them too thick, but I am not that co-ordinated!

A lady stopped me on walkies this morning and gave me a bag of cherries. By the time I got home, the bottom of the bag was all brown, it looked revolting. I wonder how long she had been driving around with them in her car, looking for someone to give them to haha. I chucked them in the garden when I got in. Maybe they will grow, I hope so!
