Meal Planning #3

I need to think what else I'm doing with my chicken, done curry and a roast dinner so far, with curry portioned up for freezer too. Still have plenty of chicken left so thinking maybe a pasta dish, which I can freeze as well.
 
I think I'll do risotto with it tonight, I don't often make a risotto but I have the rice and stock so I'll just rummage around for stuff to add in, maybe sweetcorn.
 
I just made another thai green curry but with a different, more authentic, paste this time. Blew my head off lol. Needing to eat it with greek yogurt. Give me the fake stuff next time! I dont think I will share this one with the neighbour. Full on.
 
I fancy pasta, but I also don't, as I always do too much and never want it the next day.
 
I plan to have carrot and dip for dinner. Its been my go-to lately haha, too hot to cook and I dont want anything too heavy anyway.
 
I might have soup and toast for dinner, didn't have soup for lunch!

I need to take the sausages out of the freezer, to have tomorrow and Monday.
 
My neighbour gave me a big iceberg lettuce that he grew in his garden! So i have some beef patties defrosting and will have the lettuce with them.

I also sorted out the freezer today. I don't have too much left, just a few pre prepped meals and veggies, some bacon and the beef patties. I want to really run this all down. See what the minimum I can survive on is. Now that I can get home delivery and have a better car, its much less scary to have no food stored.
 
Rough meal plan for next week,

Sunday and Monday: mashed potatoes with pork chops
Tuesday: ? Depends on if I have leftovers
Wednesday: chicken and mushroom pasta bake
Thursday: leftovers
Friday: mushroom omelette and chips
Saturday: something simple so maybe soup and toast
 
There are so many more premade options for delivery now! I even saw yorkshire puddings! I have ordered some gnocci for tomorrow, I have never been good at making it from scratch so I'm keen to try it from the packet.

I've had lots of tomatoes and peaches from the garden.
 
Batch cooking today. Chicken was $8.50 a kilo if I got 2 kilos. I decided to just make it as easy as possible for myself. And while its not super healthy, its stuff I will eat from the freezer. I just got frozen prepped veg and a jar for butter chicken, so that was simple (Chicken tonight, even did the song and dance!). The Honey mustard meal base I ordered was out of stock, so I had to make that from scratch but it wasn't too difficult and tastes great.

Next is the spag bog but the mince hasnt defrosted yet. I dont actually know how I will fit this all the freezer so I will probably give the bulk of this one to the neighbour since it will have all his homegrown ingredients in it!
 
I've got leftovers for tonight, and I'm thinking of getting the toastie maker out and having that for lunches this week as I've got quite a bit of cheese in the fridge.

Might get the sausages out of the freezer for tomorrow, but I'm out to the big city and might not feel like cooking.
 
I'm thinking chicken pasta bake type of thing for dinner today and tomorrow. Got plenty of cheese to use up and some frozen chicken pieces. Easy meal that I'll no doubt have a week's worth of leftovers as I can never portion pasta correctly!
 
Im so sick of pasta and rice and they make my legs hurt, but its cheap! I havent been cooking much cos I have been eating lots of those frozen tray meals.

Just put some pumpkin in the oven to roast. Will share it with the dogs with a dollop of greek yogurt.
 
I got chicken and leeks today at zero waste, so I'll make soup.

Also picked up some guacamole and hummus, and the supermarkets are doing 4p carrots, so that's my snacks for the week.

I'll use the rest of the chicken for a pasta bake or something. Yet to decide, needs defrosting first.
