Meal Planning

I need to do some batch cooking/prep again. The freezer is bare of already prepped things.

When I batch cook I do about 4 to 6 big portions so I have to freeze some of it. I can eat the same thing for a couple of days but there is no way I could eat the same thing every day for almost a week !

I do need to find some new recipes for batch cooking though
Yeah, see I will eat it for 4+ days. Usually mixing it up, like curry and rice two days, and curry and chips two days.

I did another load of savory mince last night. Currently big on that haha cos mince is so cheap. Not my nicest batch but I have 6 containers of it in the freezer and then when I get potatoes next week I'll just defrost that on top.

Getting another cheap rolled turkey breast this weekend and I'll make a white sauce with pasta and veg as a side to freeze, another current fave and so easy too. Only one dish to wash!

Made broccoli, celery, onion, cheese and egg type thingo in the air fryer tonight, 2 to freeze and one for tomorrow.

I just buy what I'm in the mood for or order take out and pick up if i feel like going out. I really never know what I want to eat until I'm hungry.

chicken pasta
I have that on my meal plan, lemon chicken pasta.
Tonight is a with chips meal, not sure what yet, I'll look through the freezer later.
Tomorrow is ravioli, as I got it from aldi yesterday, wasn't in the plan bit that's why I leave spaces, sometimes I'll grab an extra meal that I just feel like.

Its a cool night so I am going to make a pasta bake tonight. Some to freeze and some to share. I got a bag of tomatoes from my neighbour, just got some chicken out of the freezer and I have a zucchini and some mushrooms too. But i think I might be nearly all out of cheese! How does cottage cheese freeze?

I don't think it does, especially if you want to eat it but then I can't stand the stuff or sit down for it. Do you intend to use it as part of the main or as an appetizer?

No idea, horrible stuff!

I never freeze pasta, no idea why, but I'll freeze the rest of the meal, but always do fresh pasta. It would save time if I froze it all together.

I buy boxes of fresh pasta from the supermarket and freeze them. That way, with jars of sauce, I have easy meals to hand.

In the pasta bake instead of making a sauce, but i can make a sauce instead. Its just the only sort of cheese I have! Haha

Ohh i love it at the moment! Mostly on its own, never really used it in cooking, usually just on the side..or on a fork in front of the open fridge lol

That is odd on its own grounds, apparently nightshade keeps a fork in the fridge!
What the !
From the way you two young persons are going on about cottage cheese it must not be the same cottage cheese that was about in Cornwall in the late 1970's. Cos that stuff was usually added as a side dish to a split pastie.

I just remembered I have an unopened pack of feta in the back of the fridge! I will use that instead and go for a more summery style spiral pasta with zucchini and onion and the tomatoes rather than a heavy bake. Picked some limes incase I need them. Wish I had some olives, boo.

Made another batch of that pasta with the neighbours tomatoes today because it turned out so well with feta! Added capsicum instead of zucchini today because I didnt have any. But I have two zucchinis (and olives) coming in an order tomorrow, so I might have to use them in a zucchini slice instead.

What does everyone make for batch desserts? I usually stick to chocolate but thats now $7 a block, so Im thinking I might go back to baking brownies or something freezable. Mousse maybe?

Mine isn't freezable, but the vast majority of my desserts - and breakfasts for that matter - are fruit salad.

Fresh fruit can be hard to source out here, unless I get it off my own trees and nothing is ripe yet!
I need to get better at planning, the most I've got now is that I recently got back into hellofresh, but that's only twice a month, so I still have to meal plan for the rest. I'll get there. Hopefully, it'll help that I'm starting to use a daily/weekly planner book for a bunch of stuff.

Yep, you'll get there :)
Rough meal plan for next week:

Monday/Tuesday: Chicken curry, plus extra to freeze.
Wednesday: freezer meal, possibly pie and chips.
Thursday/Friday: salmon with hollandaise and potatoes

Veg from freezer mostly. May pop over to zero waste and see what veg is going free.

I'll look at the weekend later in the week, and will get sausages out the freezer for next week on Sunday.

Omg salmon yum!!!
My zucchini slice was a fail... Needed much more flour and cheese. Its edible but sorta soggy, only two serves to freeze. It might reheat better in the airfryer. I used the "bake" option on my oven and it smoked out the kitchen. Good to know my dogs will tell me before the smoke alarm does! Helpful puppers also helped to eat a bit.

Find myself desperately wanting homemade tuna salad on a brioche bun, probably because I can't right now. Tomorrow at lunch, I just keep chanting to myself, tomorrow at lunch I can eat real food again. And then I'm making lasagne for the next three days until I get my next round of hellofresh 🙂

I remembered to take the salmon out of the freezer to have tomorrow.
