Mexican chicken enchiladas and lots of Tex-Mex (as a personal note, when I ask about spice levels, don't tell me anything is fine if it's not, I hate guessing and actually enjoy watching people suffer who couldn't be honest with me). Many love my omelettes (peppers, garlic, cheese, and salsa) which will usually be served with spicy sausages. I do most of the holiday cooking as well with my pumpkin pie being popular. Many find my jalapeno cornbread an interesting experience, at least since I left Texas.
I take pride in my vegan dishes back when I attended a veggie potluck on a regular basis. Vegetarians used plenty of cheese (and other dairy) so that the poor vegans barely had anything decent to eat (made me wonder if they were really vegans in private), so I worked to create something good for them. It was so popular (whether it was something Tex-Mex or Thai) that I had to make a lot as the vegetarians (and those, like me, who weren't even vegetarians) were wanting a serving as well.
