So I got a little creative the other day and made some muffins that turned out
really well. They weren't difficult and I managed to make them with just what I had around the house. I did the dishes when they were baking too, which was a big help! The link to the original recipie is below, I tweaked it a little bit to match my own tastes

Banana Chocolate-Chip (With Oats!) Muffins
Ingredients:
1 cup quick-cooking oats
1 +
1/2 cups of all purpose flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1 dash of salt and ginger
about 3-5 dashes of cinnamon and nutmeg
2 tablespoons butter (soft)
1/2 cup brown sugar
2 ripe bananas, smashed up
1 egg
2 tablespoons cooking oil, I used canola
1 teaspoon vanilla extract
1/2 cup semi-sweet chocolate chips
1/4 cup of milk chocolate chips
and some extra brown sugar to sprinkle on top
***(the chocolate chips could be substituted for nuts if you would rather)***
How to Make 'Em!
1. Preheat oven to 350 degrees (F)
2. In a large bowl, combine all of the dry ingredients (listed in the first paragraph, above).
3. In a smaller bowl, blend together your butter and brown sugar until they're thoroughly mixed. Then, beat in the bananas, egg, oil and vanilla. Mix until blended together.
4. Mix your wet ingredients into your dry ingredients gradually, until you have a nice moist batter to work with. Then, add in your chocolate chips (or walnuts or whatever you'd like to have in your muffins).
5. Spoon your batter into lined muffin tins,
about 3/4 full. Then sprinkle your muffins with a
little bit of brown sugar on top (emphasis on little!).
6. Bake at 350 degrees for about 20-25 minutes (or until a toothpick/knife comes out clean of batter). Once they're baked just let them cool for about 5 minutes and you're done! Enjoy! :yay:
