Meal Planning #3

@HowiMetdaSlayer I just put crispy coated chicken, 4 bean mix with Mexican seasoning and oddly, garlic peeled potato coated in flour on a tray in the oven. Then to serve, I put it all on a tortilla with salad, avocado and greek yoghurt (sour cream substitute). Nom Nom easy tasty meal.

What's everyone's go-to soup? I definitely feed like I'm in "soup mode" now...
Im not a big soup fan,but I eat a lot of pumpkin soup because I can share it with neighbours and the dogs. I much prefer butternut pumpkin over kent or other varieties. Sometimes I will add a sweet potato in there too.

I have never tried making pumpkin soup, but I would like to! How do you make it?
 
Easy peasy! Step one: throw pumpkin in trash. Step two: open up a can of Campbell's tomato soup, put in a can & cook. Done! 😉

I buy half a butternut pumpkin because a whole one is too hard for me to chop. Then I peel and chop into large cubes. Boil the pumpkin in minimal water in a pot on the stove. I use a stick blender to mix it all together when the pumpkin is soft, usually adding honey at this point (nutmeg or cinnamon is good too). Sometimes I will air fry the pumpkin cubes rather than boil. It pretty much comes out the same, just depends how lazy I am feeling (airfrying is easier cos I dont have to watch the stove). Add butter, yougurt, sour cream or milk to serve. Its nice plain too but I like a bit of dairy to fill me up.
 
Love soups, I'll make one out of whatever veg I have, often adding red lentils to thicken it and make more portions.

A cheap to make one, but is a bit different is pea and mint, as the only real expense is a bag of frozen peas.

I rarely make soups from scratch, but usually have a can at least in the cupboard as something easy to pull out when needed. Currently it's royal game, though as we're heading into soup season, that will probably change. Other soups I tend to have to hand when I'm eating them are carrot and coriander, which I think is a nice winter soup, and some kind of luxury mushroom soup. Sometimes I'll get the refrigerated rather than tinned soups, but they naturally don't keep as long.

Carrot and coriander, and mushroom are ones I do tend to buy, just as I've never made a really good carrot and coriander and it takes a lot of mushrooms to make soup. Otherwise I'll make it myself, and portion and freeze, easy to just grab a portion out of the freezer and heat it up.

I'll usually make 4 portions at minimum, but mostly aim for around 6, in the slow cooker. I do have a soup maker though so can use that for any veg I have that will make less than 4 portions.

Soup makers do make it a lot easier to do a single soup. as otherwise you can end up trashing a lot of cookware just for a single meal. Batch cooking is better if you lack anything like that, though I do need to sort my freezer out before I can do much batch cooking at the moment.

I never do a single portion of soup, even in the soup maker I think I usually do 3 or 4

I wish my freezer was bigger just for this reason, so I can do more meal prep.

You tend to find your freezer usage expands to fill the available space, no matter what size the freezer is! And you end up needing more room. Which is why it's a good idea to have a serious sort out of what's in the freezer, though this is always easiest when it's below freezing outside.
 
I still haven't defrosted my freezer. Which would definitely help me get more in it.

I do find bags better than tubs, to get more in the freezer
 
All hail instant gravy from a tin! That on roast veg has been my comfort food this week 😀

I want to make some chocolate crackles before I eat all the cocopops. I got them super cheap from aldi. I am looking for an easy recipe now. I vaguely remember there is one I can do you with condensed milk, and I want to see if I can find it before I waste ingredients. I dont have any chocolate so I cant do the recipe on the box. I am writing this to remind me so I do not forget the plan.
 
I might make soup today, finally use the butternut squash I bought ages ago!
 
Today's zero waste haul, swede and potatoes, will make mash. Sweet potato, to go in soup. Cookie dough, and bread.
 
Cooked up a tray of enchiladas. Some to freeze. Some for lunch today and maybe dinner tonight, if not lunch tomorrow.

Made another chocolate coconut cake. I have to restock, Im almost out of cocoa powder.
